Next, we will stop in Mahogany Bay, Roatán, where you may see hummingbirds, monkeys, more dolphins, and other wildlife! Our final stop will be Cozumel, the heart of Maya culture. Wander among the iguanas at San Gervasio, ruins of buildings that honored the aged jaguar goddess Ix Chel—or, a little farther afield, visit Tulum or the UNESCO World Heritage site Chichen Itza.

Soak up its natural beauty—whether at the Key West Butterfly & Nature Conservatory, the Key West Aquarium, or in the Gulf of Mexico as you snorkel the island’s reefs—or immerse yourself in some of its history at the home where Hemingway’s wrote the majority of his novels, at the Little White House where Truman and other presidents have spent their vacations, in the town’s several museums, or just by riding the trolley as it winds through Old Town.

The Cayman Islands have everything you would want from a Caribbean destination—warm breezes, clear seas and a laid-back attitude—but the archipelago also has something you might not expect: an exciting culinary scene. Between the celebrity chefs who’ve set up shop on Grand Cayman and the 135 or so resident nationalities that have helped season the island’s giant melting pot, this is, hands down, one of the best places to eat in the Caribbean. In and around George Town, the Cayman Islands' capital, you’ll find such an amazing array of culinary offerings, you’ll fear for the future of any buttons, snaps or hooks on your waistband.
And that’s where the island’s other chief pleasures come in: There’s enough walking (whether along the fabled Seven Mile Beach, around historic sites or through lush gardens) as well as stunning swimming, snorkeling and diving to be done to counter the effects of... So. Much. Good. Food. Or at least you can begin to. Oh, and one warning: Should you wind up at Rum Point—Grand Cayman’s castaway beach imago—there’s a good chance your ship is, by your own design, sailing without you.
Mahogany Bay, Roatan Monday, January 26, 2020
One of seven in the Bay Islands archipelago in the Caribbean Sea, Roatán sits atop an ancient, exposed coral reef and is positioned near the second-largest barrier reef in the entire world, the Mesoamerican Reef. Its unique—and fragile—ecosystem is a draw for those who are interested in the local flora and fauna, as well as anyone interested in beaches that invite maximum relaxation. Mahogany Bay, a 20-acre (8-hectare) section of Roatán’s port, has a lovely white-sand beach, which can be reached by foot or, for a cool (and cooling) vista, by chairlift.
In the Mahogany Bay cruise center, you’ll find unique restaurants and stores, including some selling local art made of salvaged materials. Another spot to pick up a keepsake is the Stone Castle Cameo Factory, which offers cameos crafted from Honduran conch shells. Adventures on Roatán are, for the most part, low-key, with excursions ranging from garden visits to kayaking, snorkeling, and zip-lining.

Start your day off with a splash! Cozumel Island is one of the world’s premiere dive spots; the northern part of the Mesoamerican barrier reef lies just 200 yards off the shore. Snorkel above or dive alongside the reef for a chance to see exotic fish, lobsters, crabs, eels, stingrays, and other sea critters.
Olivians who are intrigued by Mexico's Maya culture have a choice of several archaeological sites to visit. Cozumel is home to the San Gervasio ruins, where between approximately 1000 AD and 1500 AD women made offerings to the jaguar goddess of fertility and childbirth, Ix Chel. Visitors who want their history served with an extra dose of breathtaking beauty can take a ferry across the channel to Tulum, where Mayan ruins sit perched on dramatic sea cliffs overlooking the Mexican Caribbean. And those willing to travel farther can visit one of the new Seven Wonders of the World and famous UNESCO World Heritage site, Chichen Itza—a fusion of the Puuc and central highlands architectural styles of Mexico.
